Thai Chicken Wings
20 chicken wings
Fresh coriander leaves, for garnish
To make garlic marinade:
10
red chilies, sliced
12 cloves garlic, minced
60g palm sugar
5 tbs fish sauce
40g coriander roots
1½ turmeric
4 tbs black pepper
How to cook:
1. To
make garlic marinade, blend all of the garlic marinade ingredients
until smooth.
2. Pour
the marinade on top of the chicken wings and set aside for 1 hour.
3. Grill
the wings for 10 minutes on each side. Garnish with fresh coriander
leaves.
Chili Chicken Chunks
4
fresh chicken legs
10 cloves garlic
2 tbs vegetable oil
10 red chilies, chopped
5 green chilies, chopped
50g roasted cashew
2 spring onions
Marinade:
½
tsp cornflour
1 tbs soy sauce
2 tsp wine
Sauce:
2
tbs chili paste
1 tbs soy sauce
2 tsp sugar
1 tbs sesame oil
1 tsp cornflour
½
tsp vinegar
How to cook:
1. Mix
the marinade and rub it on the chicken. Set aside for 15 minutes.
2. Combine
the sauce ingredients and set aside.
3. Heat oil until hot. Stir-fry garlic and chili quickly and
then add the marinated chicken until the chicken is cooked. Add
cashews and spring onions and stir it well.
4. Pour
over the chicken into the sauce and stir well for about 4 minutes.
