Chili
Chip Cookies
200g butter
200g good-quality dark chocolate
250g sugar
5 eggs
1 tbs flour
1½ tsp ground chili
How to
cook:
1.
Pre-heat
your oven to 200°C (400°F).
2.
Melt
the butter with the chocolate in a small saucepan or in a bowl in
the microwave. If melting in the microwave, be sure to do it slowly,
blending with a spoon between each pass.
3.
Transfer
into a mixing bowl, add in the sugar, mix with a wooden spoon and
let cool a little. Add the eggs one by one, mixing well with the
spoon after each addition. Add a rounded tablespoon of flour and the
chili powder and mix well.
4.
Pour
the dough in the petit four molds, and put into the oven to bake for
ten to twelve minutes. The top should look set, but the inside
should still be on the soft side.
5.
Let
the the mini bites cool down enough to unmold them, then turn them
out on a rack to cool completely while you cook the other batches.
Store in a plastic container, refrigerate, and take out about an
hour prior to serving the next day.
Chili
Creamy Cheese Pie
1 cup crushed tortilla chips
3 tbs melted butter
2 pkg cream cheese, softened
2 eggs
1 can chopped green chilis
2 fresh jalapenos, chopped
120g Colby cheese, shredded
120g Monterey Jack cheese, shredded
¼ cup sour cream
Garnish:
chopped green scallions
chopped tomatoes
sliced black olives
How to
cook:
1.
Mix
the crushed tortilla chips and melted butter in a bowl. Press over
the bottom of a 9-inch springform pan.
2.
Bake
at 325 for 15 minutes.
3.
Beat
the cream cheese and eggs. Mix in the green chilis, jalapenos,
cheeses. Pour over the baked layer.
4.
Bake
at 325 for exactly 30 min. Cool for 5 minutes. Place on serving
platter, loosen the sides of the pan with a knife and remove.
5.
Spread
the sour cream over the pie and garnish with the by mounding the
chopped tomatoes in the middle, the olives on top in the middle and
scattering the chopped scallions around the perimeter of the chopped
tomatoes.
6.
Arrange
regular tortilla chips all around with points out and scatter a few
red tortilla chips around.
