Chili Salmon Steak
3
medium salmon
1 carrot
3 tbs freshly chopped coriander
Sauce:
6
fresh red chilies, finely minced
1½ tbs sesame oil
1 tbs oil
2 tbs chili paste
1½ tsp salt
1 tsp sugar
3 tbs black pepper
1 tsp vinegar
2 tsp red wine
4 spring onions, minced
5 cloves garlic, minced
5 slices ginger, minced
How to cook:
1.
Place the carrot sticks on a baking dish. Set the salmon
steaks beside the carrot sticks.
2. To make the sauce, boil garlic, spring onions,
ginger, and chili. Heat the sesame oil and oil together until hot,
and then pour the hot oil on top of the chopped seasonings. Add all
the other sauce ingredients and whisk it. Pour the sauce over the
salmon steaks.
3.
Steam the salmon for exactly 8 minutes.
4.
Sprinkle the salmon with freshly chopped coriander. Serve
warm.

tbs thai fish sauce
5 tbs thinly sliced scallions
3 tbs fresh lime or lemon juice
3 tbs finely chopped cilantro
1½ tbs minced serrano chilies
2 tsp roasted chili paste
½ tsp minced garlic
How to cook:
1.
Combine
all ingredients in a small bowl and mix well. Will keep in
refrigerator for 3 days.
