Italian Sausage Lasagna
500g bulk Italian sausage
1 clove garlic, minced
1 can tomatoes
2 tsp dried basil
1 tsp dried oregano
1½ tsp salt
2 cans tomato paste
10 ounces lasagna noodles
3 cups ricotta cheese

¼ cup grated parmesan cheese
2 tbs dried parsley flakes
2 eggs
1 tsp salt
½ tsp pepper
450g mozzarella cheese, thinly sliced
How
to cook:
1.
Brown sausages slowly; drain off excess fat. Add
garlic, tomatoes, basil, oregano, 1½ tsp salt, and tomato
paste.

Simmer, uncovered, for 30 minutes, adding a little
water if too thick.
3.
Cook lasagna noodles in boiling salted water according
to package directions.
4.
In a bowl, combine ricotta cheese, parmesan cheese,
parsley, eggs, 1 tsp salt, and pepper.
5.
Place a layer of noodles in bottom of a 13x9x2-inch
baking dish or lasagna pan. Cover with a layer of mozzarella
cheese then spoon ½ of ricotta mixture over mozzarella. Spoon
½ meat sauce over the cheese. Repeat layers.
6.
Bake for 30 to 40 minutes in a 375° oven.
Chili Pizza
1 basic pizza dough
2 cup chili
180g cheddar cheese, grated
¼ cup onion, very thinly sliced
½ green bell pepper, chopped
30g ripe black olives, sliced
250g pork sausage
9 medium-sized mushrooms, sliced
How
to cook:
1.
Sauté the sausage, mushrooms (stems and caps), and
bell pepper until very lightly browned.
2.
Preheat oven to 500 deg F.
3.
Roll pizza dough into a pizza-like shape, and add
toppings in this order: chili, sausage, mushrooms, and
peppers: olives, onions, cheese.
4.
Bake for 15-20 minutes.
