Grilled Japanese Eggplant

8 Japanese eggplants
Olive oil
2 tsp garlic, minced
salt
1 red paprika, diced
4 tsp red pepper flakes
1/2 lb Fresh mild goat cheese
6 basil  

How to cook:

1.        Prepare the grill.

2.        Cut the eggplants in half lengthwise. Brush the cut edges with olive oil and season with salt and pepper.

3.        In a mixing bowl, combine the cheese, garlic, red paprika, red pepper flakes, basil and a pinch of salt and blend well. Refrigerate until ready to use.

4.        Place the eggplant halves on the grill, flesh side down, and cook until almost soft, about two minutes.

5.        Remove from the grill, let cool slightly. Spread the goat cheese mixture on the warm eggplant pieces. Serve already.

 

 

Shabu Shabu Recipe

750g beef loin, cut in very thin slices
7 cups dashi soup stock
125g chinese cabbage
1 leek
125g shimeji, shiitake, or enoki mushroom
2 green peppers
1 red pepper
3 tsp red pepper flakes  

How to cook:

1.        Cut beef, Chinese cabbage, leek, green pepper, red pepper, and mushrooms into bite-sized pieces. Place the ingredients in a large plate.

2.        Put dashi soup in a pot at the table and heat.

3.        Add some vegetables in the pot and simmer.

4.        Cook beef slices in the pot for 5-10 seconds as you eat with dipping sauce.
