 Pasta 

 

Piccantes Pasta

5 green onions
1 red bell pepper
3 small cloves garlic
3 small red or green hot chili peppers
500g fresh fettuccine
3 tbs butter
3 tbsp. olive oil
˝ cup fresh parmesan cheese, grated
3 tbs fresh parsley, minced
˝ tsp salt
1 tsp blackpepper

How to cook:

1.       Mince onions, red bell pepper, cloves, garlic and hot peppers.

2.       Cook pasta according to directions.

3.       In skillet, heat butter and olive oil. When foam subsides, add green onions, bell pepper, garlic and chili peppers.

4.       Cook, stirring constantly, about 2 minutes. Remove from heat.

5.       Quickly add hot spaghetti to skillet; toss well, add cheese, parsley, salt and pepper. Toss. Serve immediately.

 

 

Red Pepper Pasta

1 tbs butter
1 green onion
1 small onion or shallot
2 garlic cloves
1 red pepper
2 tbs roasted red pepper cream cheese
2 tbs flour
2 cups milk
1 tsp crushed chili peppers
2 tbs parmesan cheese
1 tsp salt
2 tsp pepper
paprika
oregano and basil
parsley, chopped

How to cook:

1.      Dice onions, garlic and red pepper.

2.       Sauté onions, red peppers and garlic in butter until soft and tender. Add flour and stir. Slowly add milk and melt in Parmesan and cream cheese.

3.       Add spices to taste. Top with fresh chopped parsley.

4.       Sauce will thicken upon standing. Add less milk or more flour for a thicker sauce.
