Chili
Sugary Popcorn
700g
popped corn
1½ tbs butter
175 ml water
275g granulated sugar
275g brown sugar
175g light corn syrup
2 tsp chili powder
1 tsp salt
How to cook:
1.
Pour
the water into a saucepan then add the granulated sugar, syrup and
brown sugar. Heat the mixture, stirring continuously, until the
sugar is dissolved
2.
Blend
in the butter and continue cooking without stirring until the
mixture has reached a temperature of 240F.
3.
Put
the popped corn and into a fairly large mixing bowl and shake in the
chili powder & salt.
4.
Pour
the syrup mixture over the corn and mix well.
Spicy
Cucumber Dip
Raw
or cooked vegetables
Dip:
1
medium cucumber, peeled and seeds removed
200 ml sour cream
5 cloves garlic, minced and peeled
4 green chilies, seeds removed and minced
2 red chilies, seeds removed and minced
1 tbs coriander leaves
½
cup low-fat natural yogurt
½ tsp salt
½ tbs black pepper
10 mint leaves
1 tbs lemonade
How to cook:
1. Slice
the cucumber. Blend all of the dip ingredients until smooth.
2. Keep
it in a bowl and chill in the refrigerator.
3. Serve
it with raw or cooked vegetables - like carrot sticks, cucumber
sticks, asparagus, etc.
